I’ve been doing this thing recently where I have something at a restaurant that I love and then I scour Pinterest to find a copy-cat recipe! Baked Feta from Zoe’s… Pinterest. Peanut Butter Protein Bites from Freshii… Pinterest. “Be Awesome” smoothie from Formula Fresh… Pinterest. Although I don’t find that these copy-cats taste the exact same, they’re still delicious. For me I think food always tastes better when I don’t make it. Have I told you all I am not the best cook haha?
Luckily, these no-bake peanut butter protein bites are super easy featuring only five ingredients. I find myself making these once, sometimes twice a week. I eat them when I get that mid-afternoon hunger strike but Mack eats them for “dessert” after his dinner (he also loves this Cookie Bar). I opt for Blue Bell for dessert but to each her/his own! ???? Regardless, whether you need a hearty snack (I always eat two) or a sweet treat these are for you. Here’s what you’ll need:
2/3 cup Peanut Butter
1/2 cup Semi-Sweet Chocolate Chips
1 cup Old Fashioned Oats
1/2 cup Ground Flaxseed
2 Tbsp Honey
Shredded Coconut to taste
- Combine all ingredients in a large bowl and mix well.
- Chill for 30 minutes.
- Roll into energy balls.
- Roll in or sprinkle with shredded coconut.
- Store in the refrigerator.
I usually add about 1/2 cup of peanut butter because it makes them a little more creamy! We’ve also done half and half with peanut butter and almond butter- that gives them extra grit but they’re still yummy. For the original recipe source, click here!
